A delicacy unique to the Lombardy region, Mascarpone is technically a rich dairy product obtained by thickening fresh cream with citric acid or tartaric acid, rather than a conventional cheese. Containing a minimum of 80% milk fat, this traditional product is one of the cornerstones of Italian pastry and cuisine with its intense creaminess and velvety consistency.

It features an inherently sweet, butter-like rich flavor profile and a smooth texture. Its ability to remain homogeneous without curdling when exposed to acidity makes it an excellent thickener for both desserts and savory sauces. Real Mascarpone offers a light and silky texture that melts in the mouth without leaving any greasy residue.
