‘Nduja (pronounced /ˈnduː.ja/) is a spicy, spreadable pork salami that originates from the Calabria region in southern Italy. Made with pork, pork fat, and plenty of fiery Calabrian chili peppers, it’s fermented and smoked to develop its signature depth of flavor. Unlike traditional cured salami, ‘nduja has a soft, paste-like texture that melts easily into sauces, spreads beautifully on bread, and transforms when baked on pizza.
At Pizzeria Pera, we love using ‘nduja in our Diavola pizza. We make a rich base sauce by blending ‘nduja with tomatoes, then top it with mozzarella and authentic Calabrian salami.
